Here's what you need to know about smoothies. They are so easy to make! Sometimes it feels like it's going to be an event, but it is always easier than I imagine and I'm always happy I made one. There's something about a green smoothie too. It feels like you're doing something good for yourself just by looking at it, but of course I recommend drinking it. And, what better month to perfect a green smoothie than March? I often make smoothies for breakfast (along with a bowl of oatmeal because that's my breakfast staple) and I also love them for a mid-morning or afternoon snack. Need an easy nutritious dinner? Breakfast for dinner with green smoothies! Perfection at every meal. Here's my favorite recipe for a green smoothie. You can always substitute what you have in your freezer, refrigerator and even pantry (seeds & nuts in smoothies are my favorite). Keep in mind that darker color ingredients, such as frozen berries, will turn the color of smoothie, but it will still taste amazing.
Yield: ~4 cups or 4 servings
Prep & blend time: 10 minutes
Ingredients
1 cup cucumber, partially peeled
1 cup packed spinach
1 large banana
1/2 cup frozen pineapple (easily sub mango and peaches, although I prefer the consistency with pineapple)
1 cup dairy free milk of choice
1/4 cup sliced almonds
1/4 cup ground hemp seeds
Preparation
Add all ingredients to your blend. Blend on high until smooth. If the smoothie is too thick, add more plant-based milk. Enjoy cold or freeze for up to 3 months. If you plan to freeze and drink individual servings each day, divide prior to freezing to easily blend 1 serving at a time.
