Homemade French Fries

Here’s my how-to for getting homemade french fries crispy. First, soak the cut potatoes in boiling water - this helps remove excess starch. Second, toss the cut potatoes with corn starch to bring out the delicious crisp that we all love in a fry. This recipe is for baking the french fries, not frying, but if you have an air fryer it will work great for cooking the fries, too.


Yield: 8 side servings of fries

Cook time: 30-45 minutes


Ingredients

Non-stick spray

4 russet potatoes or you can substitute for similar sized sweet potatoes

2-3 Tbsp high-heat neutral flavored oil

2 tsp salt

½ tsp black pepper

1 Tbsp cornstarch


Preparation

Step 1: Preheat your oven to 450°. Prepare one very large or two medium sized baking sheets by spraying with non-stick oil. You can also line the baking sheets and spray the liner with the oil, as well. 


Step 2: Bring ~6 cups of water to boil. Cut the potatoes into thin strips for french fries. I like to leave the skin on the potatoes, but you can peel them if you prefer. Place the cut potatoes into a large bowl. Pour the boiling water on top of the potatoes so they are just covered and let sit for 1–2 minutes. Drain the water from the potatoes, rinse them under cold water, and return them to the bowl. 


Step 3: Using a paper towel or tea towel, pat the cut potatoes dry. Toss the potatoes with the oil, salt, black pepper, and the cornstarch in the bowl so that all of the potatoes are coated evenly. Spread them out on your prepared baking sheet(s) spreading them out as much as possible.


Step 4: Cook the potatoes in the oven for 25-40 minutes depending on how big you cut them. Turn the potatoes a few times during the cooking time.
