You will get all of your favorite spice and crunch of a poke bowl with this plant-based recipe packed with nutritious vegetables, protein and flavor. While tofu is not a regular on my menu and this recipe will have plenty of protein and taste without it, the crispiness and flavor make it a great add to this rice bowl. Plus, if you are new to meat free recipes, tofu is a great way to feel satisfied and full. I especially love the edamame and jalapeño for zest and spice. Enjoy!

Total cook time: 45 minutes, including the rice and tofu
Ingredients
For tofu
Extra firm tofu
1 Tbsp soy sauce
1 Tbsp corn starch
1 tsp sesame seed oil
2 Tbsp chopped scallions (whites & greens)
For bowls
1 cup uncooked brown rice
1 cup diced scallions (whites & greens)
1 cup cucumber diced to about ¼ inch pieces
½ cup shaved or spiraled carrot
1 avocado pitted and sliced length-wise
1 jalapeño sliced in thin circles (optional depending on your spice preferences)
1 package dried seaweed snack (I like these)
1 cup edamame (I use frozen edamame) cooked to package instructions
For sauce
1 Tbsp vegan mayonaise
1 Tbsp sriracha
1 Tbsp lemon juice
1 tsp salt
1 tsp soy sauce
Instructions
Preheat oven to 425° and line a baking sheet with a silicone baking mat or parchment paper for baking tofu.
For the rice
Rinse the brown rice, add to a pot and soak in two cups of water for 10 minutes. Drain water from soaking rice. Add fresh water and cook brown rice per package or rice cooker instructions.
For tofu
Slice the tofu in half lengthwise and place both of the slices side by side on top of a tea towel or paper towel. Place another tea or paper towel on top of the tofu and press to remove as much excess water as possible. Finish cutting the tofu by cubing it into ½ inch pieces. Combine soy sauce, starch, sesame seed oil and 2 Tbsp scallions in a medium size bowl. Add cubed tofu and gently stir to combine. Spread seasoned tofu cubes on lined baking sheet and bake for 25 minutes turning half way through.
Assembly
Once rice and tofu are cooked, assemble your bowls by dividing all ingredients evenly into four bowls. Combine all of the sauce ingredients in a small bowl and drizzle on top.
